Refreshing Spring Rolls Recipe
Springs rolls are perfect for when you want a quick snack or a light meal on a hot spring/summer day. This is especially good when you're trying to be healthy! If you want to cut down on the calories and have a refreshing and filling meal with vegetables & healthy protein, you should definitely try this spring rolls recipe. It's made of rice paper, cucumbers, carrots, shrimp, and rice noodles!
Ingredients
- Rice paper for spring rolls: 10 sheets
- Cucumber: 1
- Carrot: 1
- Avocado: 1-2
- Shrimp: 10 pieces
- Chicken breast: 1 piece
- Rice noodles: about 80g
- Mint leaves: appropriate amount
Ginger Peanut Sauce
- Unsweetened peanut butter or cashew butter: 2 tbsp
- Grated ginger: 2 tbsp
- Hot water: 1/2 cup
- Soy sauce: 1 tbsp
- Nuoc mam (fish sauce): 1 tsp
- Rice vinegar: 5 tbsp
- Raw honey: 2.5 tbsp
- Red chili pepper: 2-3 shakes (adjust to taste)
- Lime juice: if available
Instructions
- Slice the cucumber and carrot into thin strips using a slicer, and cut the avocado into thin pieces.
- Steam the shrimp and chicken. Slice each shrimp in half lengthwise, and cut the chicken into thin slices.
- Cook the rice noodles, then rinse them under cold water and drain.
- Mix the sauce ingredients well using a small whisk.
- Quickly dip a spring roll wrapper in water and spread it out on a damp cutting board. Place the rice noodles, carrot, cucumber, and avocado near the edge closest to you. Leave some space, then place two shrimp halves, chicken slices, and 2-3 mint leaves further away from you. Roll it up tightly.
