Pumpkin & Spinach Salad with Homemade Sesame Dressing Recipe

Fall is in full swing, and what better way to embrace it than with a healthy, seasonal recipe

Today, I’m sharing a delicious Pumpkin and Spinach Salad with a homemade sesame dressing that’ll have you feeling full and fabulous! 

Let’s talk pumpkins! Not only are they the ultimate fall ingredient, but they’re also packed with fiber—giving you that satisfying feeling of fullness even with just a small amount. Plus, pumpkins are loaded with antioxidants, including vitamins C and E, which give your immune system a boost and keep your blood circulation flowing smoothly. 

And also, spinach is a nutrient powerhouse that’s rich in vitamin C and calcium, making this salad a fantastic way to keep your bones healthy during the colder months. We’re adding a handful of almonds too, which are full of calcium and protein. They add a lovely crunch and even more nutrients to this salad. 

And the dressing? It’s light and dairy-free, but still packs a punch of flavor. With the nutty goodness of sesame, you’ll get a refreshing yet satisfying taste with every bite! Ingredients:

<Sautéed/Grilled Pumpkin>

♥ Japanese Pumpkin: 1.5-2 cm diced, 2-2.5 cups
♥ Olive oil: 3 tablespoons

<Salad>
♥ Spinach: 4 cups, cut into 4 cm widths
♥ Almonds: 1/2 cup

<Sesame Dressing>

♥ Sesame paste: 1/2 cup

♥ Water or hot water: just under 1/2 cup 

♥ Lemon juice: 3 tablespoons 

♥ Rice vinegar: 1 teaspoon 

♥ Mustard: 1 teaspoon 

♥ Salt 

♥ Pepper


Instructions:

1. Cut the pumpkin into 1.5-2 cm cubes and sauté in a pan with heated olive oil until browned. If the oil is insufficient, add more. Once the pumpkin is soft, remove it from the heat, transfer it to a plate, and let it cool. 

2. Wash the spinach and place it in a bowl. Chop the almonds. 

3. Mix the ingredients for the dressing. Stir the sesame paste with water or hot water until it becomes creamy. Once it reaches a creamy consistency, add the remaining ingredients and mix well. 

4. Combine the spinach, pumpkin, and almonds from step 2, plate the mixture, and drizzle with the dressing.

5. So simple! Enjoy!

★Tips★ 

*Instead of sautéing, you can drizzle the pumpkin with oil and roast it in the oven until slightly browned for a delicious result. 

*You can substitute spinach with your favorite leafy greens. 

*Adding your favorite herbs to the dressing enhances the aroma.
