Vegan Cauliflower & Chickpea Curry Recipe

During the colder seasons, we crave for warming and comforting food like a nice bowl of curry!

I’d like to introduce you to vegan cauliflower and chickpea curry.

The spices; curry powder, cumin, coriander, and turmeric not only make the curry super flavorful but will also enhance your immune system.

It’s rich in antioxidants that can help alleviate allergy symptoms and make you feel more comfortable even if allergies do occur.

Ingredients

  • 2 teaspoons of minced ginger
  • 2 teaspoons of minced ginger
  • 1 clove of garlic, minced
  • 1/2 onion, finely chopped
  • 1/2 head of cauliflower, cut into approximately 2cm pieces (about 2.5 cups)
  • 2 tablespoons of olive oil
  • 1 cup of cooked chickpeas or canned chickpeas
  • 400ml of coconut milk
  • 3 tablespoons of tomato paste
  • 1.5 tablespoons of curry powder
  • 1/2 tablespoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of chili powder
  • 1 tablespoon of turmeric powder
  • Salt, to taste
  • Pepper, to taste
  • Instructions:

    1. Heat a pot and add olive oil. Once heated, add minced garlic, ginger, and chopped onions. Sauté well and season with salt and pepper.
    2. When the onions become translucent, add cauliflower and a pinch of salt.
    3. After a few minutes of sautéing, add chickpeas and quickly stir-fry.
    4. Add curry powder, cumin powder, coriander powder, chili powder, and turmeric powder. Mix the spices into the vegetables and chickpeas thoroughly.
    5. Add coconut milk and mix gently. Dissolve and add the tomato paste. Taste and if needed, adjust the salt. Once it comes to a gentle boil, turn off the heat.
    6. Serve with your preferred grains, garnish with parsley.
    7. Enjoy!
