Pumpkin Potage with a Japanese Flair Recipe

Why not try making this delicious, homey, and healthy pumpkin soup with a Japanese flair!
You mix in some miso for the nice umami flavor.
If you're a soymilk lover this is also a perfect recipe since the bulk of it is soymilk!
Have some for breakfast, lunch, or dinner!
Ingredients:
Pumpkin 500g, peeled & cutGarlic 1 clove, mincedGinger 2 slices, mincedOnion 1/2 medium size, thinly slicedOlive Oil to tasteSalt and pepper to tasteWhite miso, 1 tablespoonWater or soup stock, 400ccSoymilk, 400ccParsley as garnishInstructions
Heat olive oil in a pot over medium heat, add garlic and ginger, and sauté for 30 seconds.Add the onion, season with salt and pepper, and sauté over medium heat until it becomes tender.Add the pumpkin, sprinkle with a little salt, and sauté for a few minutes. Add water or soup stock, cover, and simmer over low heat for 10 to 12 minutes.After cooling a bit, transfer to a blender or food processor, add 200cc of soy milk, and blend until smooth.Return to the pot and add 200cc of soy milk over low heat. Once it's warmed up, add miso while stirring, and remove from heat just before it boils.Plate it and garnish with parsley.Enjoy!
