Nutritious Baked Tomato Salad Recipe

Did you know that tomatoes are 95% water, but they also contain a significant amount of dietary fiber, which is effective for intestinal health and lowering cholesterol? Additionally, tomatoes are rich in vitamin C, which is effective for preventing colds and promoting beauty. One medium tomato contains about 28% of the daily recommended amount of vitamin C!

Here's a baked tomato salad recipe that will help you get your nutrients in your body on a hot summer day! The dressing will be homemade and tomato is pan baked! It's time to reenergize from a healthy summer meal!

Ingredients:

  • 1 big tomato
  • 1/2 cup water
  • 2 tablespoons olive oil

Green Shiso Leaves Dressing:

  • 3-5 green shiso leaves (If you don't have any, you can substitute with herb of choice)
  • 1 small garlic clove
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 tablespoon olive oil

Tips: If you want your dressing to taste less sour, reduce vinegar by 1/2 tablespoon. This recipe works great with cherry tomatoes as well :)

Instructions:

  1. Make a deep cross-shaped cut into the tomato without removing the stem end (see picture above). Make vertical cuts on the bottom side, and then make three horizontal cuts to divide it into eight sections, but be careful not to cut all the way through.
  2. Cut shiso leaves into thin strips. Mince garlic. Mix shiso, garlic, soy sauce, olive oil, and vinegar to make dressing.
  3. Pour 1/2 cup of water into a pan and bring it to a boil. Add the whole tomatoes, cover, and simmer until the moisture evaporates. Once the moisture is gone, add 2 tablespoons of olive oil and immediately cover the pan. Cook over medium heat for 5 minutes, until the tomatoes develop a browned crust. Once browned, flip the tomatoes carefully to avoid them falling apart, and cook for an additional 5-7 minutes, or until they have browned evenly. Cooking time may vary depending on the heat, so adjust as needed to achieve a good crust.
  4. Plate the tomatoes and drizzle shiso dressing. You can serve while still hot but I personally enjoyed it cooled!
