Creamy Asaparagus Pasta Recipe
If you're looking to have a warm bowl of pasta with plenty of vegetables that isn't high in calorie, this recipe is for you!
The sauce is made of almond milk, pecorino romano cheese, with a hint of lemon!
The vegetables include asparagus, green peas, and green onions.
Asparagus is rich in nutrients. In particular, it contains a variety of B vitamins that are involved in fatigue recovery and metabolism. The vitamin C in them boosts immunity and contributes to preventing colds and infections. Vitamin K and Calcium are essential for bone and dental health.

Ingredients:
- Pasta 400g
- Salt, to taste
- Butter, 2 tablespoons (approximately 30g)
- Garlic, 2 cloves
- Asparagus, 6-8 spears
- Green peas, 30g
- Green onions, 2 stalks (or 1/2 stalk if using Japanese green onions)
- Red chili pepper (or chili flakes), 1/2 to 1
- Salt, 1/2 teaspoon
- Black pepper, to taste
- Almond milk, 180ml
- Pecorino Romano cheese, 70g
- Lemon zest, 1 teaspoon
- Chopped parsley
Instructions:
- Finely chop the garlic, slice the green onions into 1 cm widths, peel the lower half of the asparagus and cut it into diagonal pieces of 4-5 equal parts.
- Boil the spaghetti for a few minutes less than instructed on the package.
- Heat a pot over medium heat, add butter. Sauté garlic and asparagus for 1 minute, then add green peas, green onions, salt, red pepper flakes, and pepper. Sauté for an additional 1-2 minutes.
- Drain the boiled spaghetti and add it to the pot. Pour in almond milk and heat over medium heat.
- Add grated cheese, quickly stir until melted. Turn off the heat, add grated lemon zest, check for seasoning, and add salt if needed.
- Serve on a plate, sprinkle with cheese and parsley. Optionally, you can add black pepper to taste.
- Almond milk can be substituted with other types of milk or cream.
