Roasted Cabbage with Lime Dressing Recipe

Serves 3-4 people
Ingredients:
- 1 head of cabbage, cut into 6-8 wedges (thickest part around 4 cm)
- 2 cloves of garlic, thinly sliced
- 120 mL of olive oil
- 1/2 tsp of salt
- 1 tsp cumin powder
- a pinch of black pepper
- Dressing:
- 100 mL of freshly squeezed lime juice
- 2 tsp of mustard
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the oven to 400 F. Grease an oven dish with olive oil. Mix the dressing ingredients in a bowl.
- Arrange the cut cabbage in the oven dish. Sprinkle salt, black pepper, and cumin powder over the cabbage. Drizzle olive oil over the entire cabbage.
- Place the sliced garlic on top of the cabbage and bake in the preheated oven until the surface develops a light browning, approximately 15 minutes. Remove from the oven, flip the cabbage wedges, and bake for an additional 15 minutes. If it looks like it might burn, cover it with aluminum foil while baking.
- Once the cabbage is done, transfer it to a serving dish and drizzle the dressing over it.
