Refreshing Quinoa Salad Recipe
It's getting hotter and what's more perfect than enjoying a refreshing and nutritious quinoa salad as an appetizer. It's light and has a hint of citrus flavor from lemon juice and it's slightly sweet from the honey. Quinoa also has many benefits because it's a superfood rich in dietary fiber and minerals, containing all essential amino acids. The parsley included in this recipe offers Vitamin C & A!
Toss up a simple quinoa salad to go with your meal on a hot spring/summer day!
Ingredients
Tbsp-tablespoon, Tsp-teaspoon
- Quinoa: 1/2 cup (50g)
- Water: 1 cup (200ml)
- Parsley: a handful, finely chopped
- Thin green onions: 10 cm
- Red bell pepper: a small amount
- Cherry tomatoes (for garnish)
Dressing:
- Apple cider vinegar: 1 tbsp
- Olive oil: 1 tbsp
- Lemon juice: 1 tbsp
- Raw honey: 2 tsp
- Salt: slightly less than 1/2 tsp
- Black pepper: a pinch
Instructions
Quinoa:
- Rinse the quinoa under cold water and drain using a strainer.
- In a saucepan, combine the rinsed quinoa and water. Bring it to a boil over high heat. Once boiling, reduce the heat to low and cover with a lid.
- Simmer over low heat until all the water is absorbed, about 5 minutes.
Salad:
- Finely chop the parsley and thinly slice the green onions.
- Finely chop the red bell pepper.
- Put all the ingredients in a bowl, then add apple cider vinegar, olive oil, lemon juice, raw honey, salt, and black pepper. Mix well.
- Garnish with cherry tomatoes before serving.
