This time, I’m excited to share my recipe for Pumpkin and Mushroom Mac 'n Cheese! Macaroni and cheese, or Mac 'n Cheese, is a beloved comfort food in American and British households, made by coating cooked macaroni with a rich cheese sauce.
In this version, I've lightened it up by reducing the amount of cheese and using more pumpkin sauce for added flavor. Both pumpkin and mushrooms are packed with dietary fiber, making this a healthier twist on the classic.

Ingredients:
<Serves 4>
♥ Garlic, minced – 1/2 teaspoon
♥ Mushrooms – 4-5, sliced
♥ Olive oil – 3 tablespoons
♥Japanese Pumpkin – 200g (puréed from 250-300g)
♥ Almond milk – 1 cup
♥ Gruyère cheese (or your preferred cheese) – 50g
♥ Salt – 2 teaspoons (adjust to taste)
♥ Black pepper – a pinch
♥ Gluten-free macaroni – 500g
Instructions:
1. Peel the pumpkin, boil it, then purée it in a food processor or mash it by hand.
2. Heat olive oil in a pot, add the garlic, and once it’s cooked, add the mushrooms. Season with salt and pepper, then sauté for about 5 minutes.
3. Add the pumpkin purée and almond milk to the pot from step 2, and simmer while stirring for a few minutes.
4. Cook the macaroni according to the package instructions.
5. Add the cooked macaroni to the pumpkin sauce, mix in the cheese, and it’s ready to serve!
