Low Calorie Potato Salad Recipe with No Mayonaise!

If you want a recipe for a low calorie no mayonaise potato salad, you've come to the right place. You don't necessarily need a lot or even any mayonaise to enjoy your potato salad. You just have to be creative with it. Potato salads are great for the summer or even all year long when you want a fun little side dish for your meal. This recipe is just boiling up the veggies then mixing in the seasoning- it will be prepared in no time! 

 

Ingredients:

  • 5 potatoes
  • 1 carrot
  • 1/4 cup red onion
  • 2.5 tablespoons vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • salt & pepper

Instructions:

  1. Slice the purple onions thinly and place them in a bowl. If using regular onions, soak them in water for a while to reduce their pungency, then pat them dry with paper towels.
  2. Peel and boil potatoes and carrots, then add them to the bowl from step 1 and mash them using a masher.
  3. Add salt, raw honey, vinegar, and oil in that order, mixing each ingredient well. Taste after adding the vinegar and adjust to your preference before adding the oil. Finally, season with pepper to taste.
