Gluten Free Apple Scones Recipe

As Fall season is approaching, some of you may be craving a nice & healthy gluten free apple scones. If you are, then this recipe is perfect for you! And it's so simple to make!

Apples contain pectin, a type of dietary fiber known as a prebiotic. Pectin helps to increase the number of beneficial bacteria in the gut, which improves gut health. On top of that, you will be using mixed grain flour (millet flour) which is rich in dietary fiber and essential amino acids. 

Ingredients:

<Serves 6 Big Scones>

  • 1.5 cup apple 
  • 2 tablespoons honey
  • A little lemon juice

Liquid Ingredients

  • 1 teaspoon lemon
  • 1/4 cup shredded apple
  • 1/2 cup almond milk or other types of milk
  • 2 tablespoons honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla

Dry Ingredients

  • 1.5 cup millet flour
  • 1/4 cup almond flour or coconut flour
  • a pinch of salt
  • 1.5 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1.5 teaspoon cinnamon

Instructions:

1. Preheat the oven to 180°C (350°F). Cut the apples into 6–8 wedges and slice them thinly crosswise. Toss the apples with honey and lemon juice. 

2. In one bowl, mix together the liquid ingredients. In another bowl, thoroughly mix the dry ingredients. 

3. Gradually add the dry ingredients to the liquid ingredients, mixing until there is no visible flour. Once well combined, add the apples and mix thoroughly. Shape the mixture into a round form with a diameter of about 20–25 cm (8–10 inches) and a thickness of about 2.5 cm (1 inch) using your hands. 

4. Transfer the dough to a greased baking sheet. Score it into 6 pieces, brush the surface with coconut oil, and bake for about 50 minutes, or until the surface is a light brown.

▼Tips▼ 

  • Instead of millet flour, you can use a blend of mixed grain flour, gluten-free flour, or wheat flour. When using almond flour or coconut flour, start by adding half the amount of coconut oil and almond milk to help bind the dough together. 
  • Before baking, score the dough into 8 pieces or any preferred size or shape. 
  • Adding nuts or raisins to the dough can enhance the flavor.?
